Watermelon Feta Mint Salad
I know his is a real estate page and you're probably not here for recipes. But hear me out.
Summer in Middle Georgia is no joke. When it's pushing 95-100 degrees and the last thing you want to do is turn on the oven, this is the recipe you need. I've been making this watermelon feta mint salad on repeat all summer and I keep getting asked for it, so I figured it was time to just put it out there. Consider it a little gift from me to you.
Five ingredients. No cooking. Ready in about 10 minutes. It's cold, it's fresh, it's a little salty and a little sweet, and it is absolutely perfect for a cookout, a potluck, or honestly just a Tuesday afternoon when you need something that feels like summer in a bowl.

Easy, refreshing, and super tasty for summer!
What You'll Need
5 cups cubed seedless watermelon
1/2 cup crumbled feta cheese
2 tablespoons fresh mint leaves, torn or roughly chopped
1 tablespoon honey
1 lime, juiced
That's it. Five things, most of which you probably already have.
How to Make It
Add your cubed watermelon to a large bowl or serving dish. Sprinkle the feta over the top, then scatter the mint. Drizzle with honey and squeeze the lime juice over everything. Give it a gentle toss, just enough to combine without breaking down the watermelon. Serve immediately or refrigerate for up to an hour before serving.
If you let it sit too long the watermelon starts to release juice and it gets a little watery, so I try to make it close to when I'm serving it. If you're taking it somewhere, pack the components separately and toss right before you set it out.
A Few Ways to Switch It Up
If you want to make it a little more substantial, thinly sliced cucumber is a great addition. A handful of arugula underneath turns it into more of a proper salad. Some people like a little flaky sea salt on top and I have to say, they're not wrong. Fresh basil works in place of mint if that's what you have on hand.

I'm always looking for something easy to bring to a summer gathering that feels a little different from the usual sides. This one always gets comments and people always want the recipe. It looks impressive, it takes almost no time, and it uses produce that is at its absolute best right now in Georgia. Watermelon in July around here is hard to beat.
